Kitchen Manager

The Kitchen Manager at Sri Lankan Street Food oversees daily kitchen operations, ensuring the
delivery of authentic Sri Lankan cuisine while maintaining high standards of food safety, quality, and efficiency. This role involves supervising staff, managing administrative tasks such as budgeting and inventory, and ensuring compliance with health regulations. Fluency in Sinhala and English is
essential to effectively communicate with staff and support the cultural authenticity of the menu
and operations.

Key Responsibilities:

 

1. Operational Management:

 

Oversee the preparation, cooking, and presentation of traditional Sri Lankan dishes to
ensure authenticity and quality.
Develop and implement efficient kitchen workflows tailored to the preparation of Sri Lankan
cuisine, including the use of unique spices and cooking methods.

 

2. Team Leadership:

 

Supervise kitchen staff, including hiring, training, and scheduling, with a focus on Sri Lankan
culinary techniques.
Conduct performance reviews, provide feedback, and resolve team-related issues to
maintain a productive work environment.

3. Food Safety & Hygiene:

​

Ensure full compliance with food safety standards, sanitation regulations, and health codes.
Maintain the cleanliness of the kitchen, equipment, and workstations while ensuring proper storage and handling of Sri Lankan ingredients.

​

4. Inventory & Cost Control:

​

Manage inventory to minimize waste and control costs, with attention to sourcing authentic Sri Lankan ingredients.
Monitor stock levels and place orders for spices, condiments, and other supplies specific to Sri Lankan cuisine.
Prepare and manage kitchen budgets to ensure operational efficiency.

5. Menu Planning:

​

Collaborate with chefs to design and refine a menu focused on traditional Sri Lankan dishes such as Hoppers, Kothtu, String Hoppers, Lamprais, and authentic curries.
Ensure the menu adapts to seasonal availability and customer preferences while maintaining cultural authenticity.

​

6. Customer Satisfaction:

​

Address customer feedback related to food quality or service to ensure a high level of satisfaction.
Develop strategies to enhance the dining experience, emphasising Sri Lankan hospitality and flavours.

 

7. Compliance and Reporting:

 

Maintain records related to food safety, inventory, staff schedules, and compliance.
Ensure adherence to licensing, health, and safety regulations while incorporating Sri Lankan food traditions into operations.

Required Skills:


Strong leadership and organizational abilities.
Deep understanding of Sri Lankan cuisine and cooking methods.
Knowledge of food safety standards (e.g., HACCP) and health regulations.
Proficiency in managing budgets and inventory.
Excellent communication skills in Sinhala and English, with problem-solving capabilities.

 

Qualifications:
Experience: 2+ years in a leadership role within a kitchen or food service environment,
preferably in Sri Lankan cuisine.
